Spicy Pecans

This is a great snack to have on hand for unexpected guests, or for munching during a football game. 

2 large egg whites

1/2 cup sugar

2 tsp kosher salt

1 tsp chili powder

1/2 tsp allspice

1 tsp cumin

2 tsp cayenne

4 cups pecan halves

Preheat the oven to 300 degrees.  Beat the egg whites until soft and foamy.  Combine the sugar, salt, and spices; whisk into the egg white.  Stir in the pecans.  Spread mixture in a single layer onto an ungreased cookie sheet.  Bake for 15 minutes; toss, stir, and separate the pecans.  Reduce heat to 250 degrees and bake 10 minutes more.  Toss and stir again; cool on wire rack.  Break up any nuts that stick together and store in an airtight container for up to two weeks.
